L’Escaleta was born in a semi-basement in Cocentaina in 1980 as a dream of two young couples and has been a family restaurant ever since. Little by little it was making its name around the region and in early 90s became one of the leading restaurants. Soon after its incorporation into Cuina y Tertulia, its name has also began to sound in certain circles in Alicante capital.

In 1998, the first member of the 2nd generation, Kiko, middle son of Francisco and Rita, joined the team after finishing his studies and various training courses in great kitchens of the country. In 1999, L’Escaleta undertakes a new turn by moving to new facilities outside Cocentaina, seeking, above all, a space with a higher level of comfort for its customers. We have always liked the idea of a family-run restaurant in a big house.

In November 2000, the Michelin Guide of Spain and Portugal grants us our first ‘Crayon’. In January, Alberto, the eldest son of Ramiro and Nieves, joins the restaurant service as sommelier.

To this day, and despite the fact that the 2nd generations gradually becoming responsible for the management, the two generations coexist and collaborate in all aspects of the restaurant daily life. As it was said before, since his incorporation, Kiko has been modifying the course of the kitchen, going through a slow process in search of his own identity, an identity based on flavours of the region, and aims to extract something new from those flavours we grew up and identify ourselves with. A thoughtful, peaceful, intimate cuisine, where almost every ingredient is fully recognisable and without surprises, which we believe a true connoisseur doesn’t need.
